Kansas Department of Agriculture’s (KDA) food safety and lodging program conducted an unannounced retail food inspection on 8/17/2020. As a result of that inspection, and due to the severity of the specific violations the AFC Sushi inside Topeka Dillon’s was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 3 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Employee washed hands at the deli hand sink without using soap. Just rinsed and dried hands. COS(corrected on site)-Employee rewashed hands using soap and education provided that they must use soap to wash hands.
  • An employee took thawed raw tuna from a package with gloved hands. He then changed gloves without washing his hands and touched cooked shrimp. Shrimp was voluntarily discarded. COS-PIC had employee rewash hands Education provided that hands must be washed in between glove changes.
  • Employee took measuring cup that had rice in it to the deli 3 compartment sink. He put it in soap and sprayed it out and without sanitizing it, took it back to the prep counter to store as clean. COS-employee rewashed the measuring cup properly. Education provided that sanitizer must be used when washing dishes.
