Kansas Department of Agriculture’s (KDA) food safety and lodging program conducted an unannounced retail food inspection on 3/9/2020. As a result of that inspection, and due to the severity of the specific violations the Little Caesar’s Pizza was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 5 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- On the second shelf in the walk-in cooler (WIC), a food container with fully cooked, sliced ham did not have a date-mark and the employees did not know when it had been opened. Corrected on site (COS) – Discarded On the bottom shelf on the wire rack to the left of the pizza oven, a food container with smokey BBQ sauce was opened with about 1/3 of the contents remaining. The label said to refrigerate after opening. The employees did not know when it had been opened. Corrected on site (COS) – discarded. On the wall counter above the pizza boxes, two squeeze bottles contained smokey BBQ sauce and one with garlic Parmesan wing sauce, respectively. The bottle in the WIC stated that the garlic Parmesan wing sauce should be kept refrigerated and had milk on the label. COS – Sauces were discarded.
- No thermometer was available during inspection.
- On the clean storage racks to the left of the 3 vat sink, 3 metal food containers contained food residue on the food contact surfaces. COS – Food containers were placed in the dirty dish area.
- 3 adult cockroaches and a baby cockroach were crawling around the left side of the 3 vat sink in the storage container for the sanitizer. In addition, a live adult cockroach was crawling around the mop sink to the right of the 3 vat sink.
- On the bottom storage rack to the left of the pizza oven, a spray bottle with equipment cleaner was stored with the spray nozzle facing single-use paper wrap for breadsticks.
