Kansas Department of Agriculture’s (KDA) food safety and lodging program conducted an unannounced retail food inspection on 9/1/2020. As a result of that inspection, and due to the severity of the specific violations Madrocks Restaurant & Sports Bar was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 9 violations were found.

This inspection marks the third, “Out of Compliance” inspection for Madrocks since May 2018:

The inspector made the following comments in support of the violations found during the inspection:

  • Bottle of green apple vodka and bottle of Bushmills whiskey had 3 fruit flies each. COS PIC disposed of both bottles.
  • In the WIC raw shell eggs on wire shelf, stored over/above RTE sauce cups and Pico. COS PIC moved eggs under RTE sauces.
  • Made in house Ranch dressing sitting in shallow ice bath 62F. Has been sitting out for 4.5 hr. COS PIC disposed of dressing and put more ice in the ice bath. 4 baked potatoes on shelf above prep table 68F. Potatoes had been taken out of cooler 4hr 40min prior. PIC said Potatoes after prepped were going back into cooler. COS PIC disposed of 4 baked potatoes. Egg milk was for onion rings located by the friers 68F. Wash had been made 4.5 hours early and was sitting on top of ice. COS PIC disposed of egg milk wash.
  • Milk in glass door cooler not date marked and cream in RIC. COS PIC date marked with correct open date. No date on Egg Rolls in WIC. COS PIC put date on Egg Rolls. Cooked Container of sausage pieces in WIC not date marked. COS PIC date marked with open date. In the glass door cooler 25 or more cups of made on site ranch sauce has no date marking. COS PIC put correct make date on pan. Pico cups in WIC had no date marking. COS PIC put correct make date on the tub of cups that contained the pico.
  • Individually wrapped Ham in WIC dated 8/19 (1 & 1/2 pans), Turkey 8/26 (1 Pan), bead pudding 8/15, Pan of cups of Mexi Ranch Sauce made in house expiration date 8/27, made in house Tartar Sauce expiration date 8/2. COS PIC disposed of all items. PIC suspect that date wasn’t changed when pulled from freezer.
  • At mop sink faucet has a y valve with shutoffs. The hose on one side had backflow prevention. The hose attached to the other side ends in a spray nozzle. COS PIC for a temporary fix removed hose when not in use. Discussed using a water wasting T.
  • Bar hand sink had no soap. COS Bartender brought some hand soap to sink.
  • Tank Sprayer had clear liquid. PIC said it was plant fertilizer. COS PIC moved to outside shed.
  • Can of Hot shot fly spray located on wife shelf with boxes of gloves. COS PIC disposed of insect spray.
