The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on January 9, 2020. As a result of that inspection, and due to the severity of the specific violations the Smedley’s Tavern and Sports Bar and Grill was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 6 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- In the RIC under the refrigerated prep table, two open containers of whipped cream cheese were not date marked. The PIC was unaware when they were opened. PIC discarded. COS In the RIC close to the bar, whipped topping was open without a date. PIC was unaware when it was opened and discarded. COS
- On the dry goods storage shelf, Kroger brand tomato juice had a class 2 dent in the top seal in two locations. PIC removed from service. COS
- In the WIC, raw shell eggs were stored on a wire rack above prepared sauces. PIC relocated the raw shell eggs. COS
- In the RIC under the refrigerated prep table, prepared salsa was not date marked. PIC advised that the salsa was prepared on 1/7 or 3 days prior and dated accordingly. In the same RIC, diced tomatoes were not date marked. The PIC advised that they were prepared on 1/6 or 4 days prior and date marked accordingly. COS
- In the WIC, the following products were date marked over 7 days: Mashed potatoes – 12/30/19 (11 days) Marinara Sauce – 12/31/19 (10 days) Jack D. BBQ prepared on site- 12/30/19 (11 days) Devil Dog prepared on site – 12/30/19 (11 days) E.O.D prepared sauce – 12/28/19 (13 days) Spicy prepared sauce – 12/30/19 (11 days) Cooked hamburgers – 1/2/20 (8 days) Cooked hamburger – 12/31/19 (10 days) Gravy – 12/30/19 (11 days) Spicy Rich Sauce 1/2/20 (8 days) All products listed were discarded. COS
- On the rack next to the 3 compartment sink with stored as clean equipment, one plastic container had a hole in the bottom and the red cutting sheet used for raw was completely cut through. PIC removed and discarded. COS
- On the rack next to the 3 compartment sink, the following equipment stored as clean had food residue on the food contact surface: 1 square metal pan 1 pair of tongs 1 ladle 2 lids with adhesive stickers 3 oblong plastic containers All equipment was removed and located at the 3 compartment sink. COS
- The hand sink in the kitchen did not have any paper towels in close proximity to the sink – they were across the kitchen. PIC relocated a roll above the sink. COS
