The Kansas Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/19/2020. As a result of that inspection, and due to the severity of the specific violations Paisano’s Ristorante was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 5 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Located at the hand sink for wait staff a female employee washed her hands with soap and scrubbed. She rinsed her hands only using cold water. Education was provided. Corrected on site by washing hands using warm water.
- Located at the automatic dish washer a female employee wearing gloves was observed scraping soiled dish ware then removing sanitized dish ware, touching food contact surface, without removing the soiled gloves and washing hands. Education was provided. Corrected on site. Dishware was rewashed and she washed hands between tasks.
- Located in the walk in cooler were 3 metal pans side by side with made lasagna. The lasagna was placed in the walk in cooler on 2/17 for cooling. The center pan had a temp 48F in the center and 41F on the outer edge. The other two pans were <41 throughout the pan. Person in charge corrected on site. She disposed of the lasagna since it did not cool to<41F within 6 hours
- Located in the dish washing room on shelves stored as clean were several utensils stored as clean with dried food residue on the food contact surface(4 ladles, 3 clear glass dishes, 12 clear plastic prep pans). Corrected on site all items moved to ware washing.
- The back siphonage device on the dish washing machine has a continuous leak. Not corrected on site.
