The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/26/2020. As a result of that inspection, and due to the severity of the specific violations the Chero’s Taco Shop was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 11 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Employee washed his hands at the front hand washing sink without soap. Corrected on site: Educated, rewashed his hands.
  • Employee washed his gloved hands in the front hand washing sink and then handled clean dishes to serve food with his unclean gloved hands. Corrected on site: Educated, gloves changed and hands washed.
  • A lidded pot of prepared on site, cooked pickled peppers and carrots were held at 69’F at room temperature in the kitchen. The person in charge said the food had been prepared last night, more than 6 hours ago. Corrected on site: Voluntary disposal of the pickled peppers and carrots, educated that prepared-on-site pickles must be held in refrigeration (under 41’F) and kept for no longer than seven days (day of preparation + 6).
  • No date mark on prepared on site pickled onions (made two days ago, according to employee) and cooked chicken (cooked one day ago, according to employee) held in make table. Corrected on site: Educated, date marked. Made on site sauces (enchilada and salsa verde) and cooked beef were not date marked in the reach in cooler. The person in charge said the foods had been made yesterday in the morning, more than 24 hours. Corrected on site: Educated, date marked.
  • In the dining area, in the reach in drink cooler, bags of masa (corn meal; lime; water) available for retail sale and customer self-service with no allergens. Corrected on site: cooler labeled with allergens.
  • In clean dish area, a bus tub with a large crack on the food contact surface was stored as clean and usable. Corrected on site: Educated, removed from use.
  • In the clean dish area, two lids and one metal pan put away as clean and usable with visible accumulations of food debris on the food contact surface. Corrected on site: Educated, moved to get rewashed
  • Two live, sluggish, adult cockroaches and one live, alert adult cockroach in the kitchen. The last pest control treatment was on 2/11/20.
  • One unmarked bottle of liquid in the kitchen. Person in charge said it was grill cleaner. Corrected on site: Educated, labeled.
  • A spray bottle of grill cleaner was stored on a wire shelf over a taco frying shaper. No leakage evident. Corrected on site: educated, moved the cleaner to an approved area.
  • A table with bags and containers of masa was stored directly under the wall-mounted first aid kit. The first aid kit was not leaking. Corrected on site: Educated, table was moved.
