The Kansas of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on December 2, 2019. As a result of that inspection, and due to the severity of the specific violations Alazanes Mexican Restaurant & Cantina was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 5 violations were found.

This latest inspection makes the third failure by Alazanes Mexican Restaurant & Cantina since a complaint from the public resulting in an inspection found 14 violations on September 11, 2019. A follow-up visit also determined the restaurant to be, “Out of Compliance” with 5 violations on September 26, 2019.

The inspector made the following comments in support of the violations found during the inspection:

  • In bar area, one bottle of Martini and Rossi Vermouth with 2 dead insects in liquor, and one bottle of Jim Beam Whiskey with 3 dead winged insects in liquor. (discarded)
  • One ROP package of a raw tilapia filet in a plastic pan in refrigerated prep table with no slit cut in packaging. 2 ROP packages of raw salmon in a plastic container without a slit cut in the packaging. PIC stated they were thawed on Saturday, over 48 hours prior.
  • In front area standing reach in cooler, gallon of milk without an open date on container. PIC stated it was opened 11/30 (repeat)
  • In front area standing reach in cooler, made on site horchata (cooked rice) with date of prep as 11/22. In walk in cooler, container of made on site salsa verde with date of prep as 11/21, a container of desebrada (shredded beef) with date of prep as 11/23, chipotle pepper (from can) with date of prep as 11/14. In refrigerated prep cooler on cookline, made on site salsa with date of prep as 11/14, and a container of cooked pasta with a date of prep as 11/24. All items held over 7 days with date of prep counted as day 1. COS discarded (repeat)
  • At mop sink in establishment, wye valve downstream from an AVB with one hose going to a chemical box with backflow prevention in the box, and the other hose was a free hose with a spray nozzle attached to the end, laying in the mop sink basin. COS hung hose out of sink, and PIC then decided to remove the hose completely.
  • Working spray bottle of yellow liquid in dish area, sitting on a shelf under drain board of dishes stored as dirty without a label on bottle to state contents. PIC stated it was degreaser. COS labeled. (repeat)
