El Cerrito in Hesston fouls 3rd straight annual inspection with 10 violations

Kansas Department of Agriculture’s (KDA) food safety and lodging program conducted an unannounced retail food inspection on 8/24/2020. As a result of that inspection, and due to the severity of the specific violations El Cerrito was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • In the steam table, queso temped 118F. PIC advised that it was prepared this a.m. PIC removed and reheated to 178F. COS
  • The refrigerated prep table closest to the steam table had an internal ambient temperature of 50F. The follow products temped as follows: Sliced tomatoes 54F; Guacamole w/diced tomatoes 50F; Sour Cream 58.7F; Shredded cheese 52.7F. PIC advised that the products had been moved from the WIC and/or were prepared prior to filling. Since all products had been in the refrigerated prep table less than 4 hours, TPHC was utilized and KDA127 to assist with paperwork. In the WIC, Cooked canitas meat temped 46F, Enchilada sauce – 44F, Raw steak strips 51F, Sour Cream 45F. All of these products had been stored in the walk in cooler since Friday or 4 days prior. Ambient temperature achieved 44.4F towards the back of the WIC. PIC Discarded the products listed above, rearranged cooler so meat products were placed in the back of the WIC and a refrigeration tech will arrive today. Any Potentially hazardous food/cooked products were placed on ice in the WIC. COS
  • In the refrigerated prep table next to the 3 compartment sink, Green chili sauce was not date marked. PIC advised that it was prepared on 8/22 and date marked accordingly. COS
  • In the Refrigerated prep table, ham lunch meat was open and not date marked. PIC advised that it had been opened on Friday or 4 days prior and date marked accordingly. In the RIC in the waiter galley, whipped topping was open and not date marked. PIC advised that the topping had been opened on Saturday or 3 days prior and date marked accordingly. COS
  • In the Refrigerated prep table next to 3 compartment sink, tomato paste from a can was date marked 8/17 or 8 days. PIC removed and discarded. COS
  • New disposable menus do not have the complete reminder nor the specific items disclosed. PIC to update menus.
  • Two plastic square container were cracked on the bottom. PIC removed and replaced. COS
  • Cheese shredder had been used and washed. Upon removal of the blade, there was cheese residue that had not been removed. Educated to remove all moving parts. COS On the knife rack, two knives stored as clean had food debris on the food contact surface. PIC moved to the 3 compartment sink. COS In the equipment storage room, two metal lids stored as clean had food debris on the food contact surface. PIC removed and placed at the 3 compartment sink. COS
  • Handwashing sink in the waiter galley had used ice and two empty salsa bottles in the basin. PIC removed the bottles and KDA127 educated. COS
  • At the dishwasher and in the chemical storage area, two clear spray bottles with an amber colored solution were not labeled. PIC advised that they were degreaser and labeled accordingly. COS
