Kansas Department of Agriculture’s food safety and lodging program conducted an unannounced retail food inspection on 8/17/2020. As a result of that inspection, and due to the severity of the specific violations the Carniceria Garcia was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 18 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Located in the freezer west of the 3 vat sink in the meat room there was raw pork head on the floor and without any kind of labeling or documentation of where it came from. Located on the retail sales floor in the ice cream freezer there were Popsicle containing coconut, candy, sprinkles and chopped nuts. The Popsicle containing sprinkles and nuts did not have a common name and did not have sprinkles and nuts in the ingredient list. Popsicle’s labeled as Strawberry Cream were green Popsicle’s that were actually Lime Popsicle’s, packages were not labeled with common name. Popsicle named with common name Gazpacho did not have a common English name on package. Ingredient label said contains mango. On the retail floor next to the front door there are bags of Duritos De Harina with no english labeling. On the North side of the retail sales floor there were 2 gallon jugs of Bitter Orange concentrate with no labeling, 7 bags of grease with no ingredient labeling and Brown sugar with no ingredient labeling. On the end cap of north shelves on the retail floor there were assorted powder drinks with no English labeling or ingredients. Located in the upright reach in cooler on the retail sales floor there were 14 packages of tortillas with no labels. At the front counter by register there were about 6 peanut logs with no labeling. COS removed from retail sale
- On the north wall on retail floor there was a can of salsa with a Class I dent. COS removed from retail
- In the refrigerator on the west wall in the kitchen there was raw bacon over raw ready to eat tomatoes and raw ready to eat chili peppers. In the refrigerator on the west wall in the kitchen there was raw beef Chorizo next to raw ready to eat garlic cloves. In the refrigerator on the west wall in the kitchen there was raw shell eggs over raw chopped lettuce. In the refrigerator on the west wall in the kitchen there was raw beef chorizo over raw ready to eat avocados. In the refrigerator on the west wall in the kitchen there was raw bacon stored above raw ready to eat cilantro and onions. On the retail sales floor in the reach in cooler there were eggs stored above raw ready to eat pecans. COS moved
- In the refrigerator on the west wall in the kitchen there was raw beef chorizo over ready to eat chicken and ready to eat ketchup. In the refrigerator on the west wall in the kitchen there was raw beef Chorizo next to cooked ready to eat butter. in the refrigerator on the west wall in the kitchen there was raw shell eggs next to a tub of ready to eat mayonnaise. In the refrigerator on the west wall in the kitchen there was raw shell eggs over ready to eat shredded cheese. Located in the upright cooler along the north wall in kitchen there was raw whole fish above prepared on site pineapple drink. In the reach in meat/cheese cooler there was raw bacon and raw Longaniza stored above ready to eat chicken and pork loaf. On the retail sales floor in the reach in cooler there were eggs stored above ready to eat Cotija cheese. COS moved
- Refrigerator on the south wall, ready to eat shredded lettuce 45F. Employee said it was made 8/16. COS discarded
- In the refrigerator on the south wall there was a bag of chicken that had a date marking of 3/17/20. As per employee they cooked on 3/17, put in freezer then pulled from freezer on 8/16. COS labeled
- Located in the refrigerator on the west wall in the kitchen, there was ready to eat sliced deli ham with no date marking. Employee said it was opened 8/16. COS labeled
- Located in the Reach in cooler on the North wall there was a pan of ready to eat pork that was made 8/9/20. COS discarded
- There is not Consumer Advisory available for under cooked eggs or steak.
- In the back storage room there was 1 tub of chips, 1 tub of uncooked rice and Flour stored in a Sterilite non food grade container. COS put foil around container for chips and moved rice and flour to stainless steel pots.
- In the refrigerator on the west wall in the kitchen there was cooked ready to eat cactus and raw ready to eat cilantro in a non food grade Thank you bag. On the shelf under meat grinder there were pork rind’s in a non food grade container on a single use IBP box lid. COS cactus and cilantro moved to Zip-lock bag, pork rind’s were discarded. On the shelf under the meat grinder in the meat room, there were pork rind’s stored in a single use IBP box. Not corrected on site
- In the meat room under the prep table there was a stainless steel pot with rough welds along the food contact surface.
- There were 3 plastic containers stored clean with sticker residue on the front side. Not corrected on site On the meat slicer in the meat room there was food debris on the blade and cutting board. Person in charge said it was last used 8/16 around 4 p.m. On the meat grinder in the meat room there was food debris where the auger of the grinder attaches. COS cleaned
- In the employee restroom by the meat room the hot water was at 80F. In the guest restroom by the kitchen the hot water was at 79F.
- Located at the 3 vat sink in the meat room there was a bucket of Chlorine water with no label. Located on the south counter in the kitchen area there was a Windex bottle with a pink liquid, Person in charge said it was degreaser. COS Labeled
- In the back storage room there was assorted chemicals over stored as clean pans. COS moved
- Chlorine sanitizing bucket above 200 parts per million. Person in charge used towel from bucket to clean meat saw. COS dumped
- At the front register in the retail shop there was a can of Lysol next to ready to eat nuts and assorted ready to eat candy. COS moved
