The Kansas Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/17/2020. As a result of that inspection, and due to the severity of the specific violations the Colton’s Steak House and Grill was cited as being, “Out of Compliance” with Kansas food safety regulations. During this inspection a total of 11 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- In the alto sham previously cooked and cooled ribs measured 97F. The cook said he had placed the ribs in the unit one hour and 45 minutes prior to reheat. COS- cook placed ribs onto direct heat to reheat.
- At the bar a bucket of bleach water was stored on a solid shelf above bottles of drink flavorings. COS- bucket was moved.
- In the WIC a large plastic, lidded pan of cooked sweet potatoes measured 44F. The potatoes were dated 2/16. The PIC said the potatoes were left over from the prior day. The potatoes did not cool properly. COS- discarded
- At the middle expo line cold holding well portion cups of sour cream sauce were holding at 57F. The cups were stored above the level of the pan that would keep them cold. The cook said they had been out less than 2 hours. COS- placed the cups back into the cooler.
- In the lowboy cooler a pan of pre-cooked, commercially prepared egg rolls lacked a date. The cook said they were pulled from the freezer Friday. In the WIC a box of commercially roasted corn on the cob lacked an open date. The cook said it was pulled from the freezer on Friday. COS- foods were dated.
- In the WIC bags of portioned corn/black beans were dated 2/3. An open bag of feta cheese was dated 2/7. In the dessert cooler an open jug of milk was dated 2/8 and a carton of whipping cream was dated 2/3. The items were held greater than 7 days. COS- discarded.
- There were no test strips to measure the sanitizing solution of quat used in the kitchen wiping cloth buckets.
- Pans stacked and stored as clean on a dish rack had dried food debris inside. COS- moved to ware washing The inside of the lettuce bin was soiled and had a grimy build up on the food contact surface. Instructed to clean.
- There is a constant drip from the hose attached to the vented dual check valve on the soda carbonator in the utility room. There is corrosive build up on the unit.
- A spray bottle of clear liquid lacked a label. An employee said the bottle contained Windex. COS- labeled the bottle.
- In the utility room cans of sterno fuel were stored on a perforated rack in contact with single use food tray liners. At the front counter a spray bottle of Windex was stored next to boxes of tooth picks. COS- chemicals were moved.
